INGREDIENTS
  • 5 Cups seeded watermelon, diced
  • ½ Cup lemon juice
  • 2 Cups water
  • 1/2 Cup granulated sugar (more or less to taste)
  • Ice for serving
  • Fresh mint leaves and lemon slices for garnishes

PREPARATION

  1. Place the watermelon in a blender along with water and blend well. Strain and reserve in a pitcher.
  2. Squeeze your lemons until you get 1/2 cup of juice and add it to the watermelon juice (You can add more if you like it more acidic).
  3. Add the sugar to the preparation and mix well.
  4. Serve over ice, garnish with mint leaves and lemon slices. Enjoy!

INGREDIENTS
 
For the chicken:
  • 1 Large chicken breast, chopped into small pieces
  • 1/4 Cup oil
  • 2 Eggs
  • 5 Tablespoons corn starch
  • 8 Tablespoons plain flour
  • ½ Teaspoon salt
  • ½ Teaspoon pepper
  • ½ Teaspoon garlic powder
  • 2 Teaspoons paprika
  • 1/2 Teaspoon cumin (optional)
For the sauce:
  • 1 Tablespoon sesame oil
  • 1 Teaspoon crushed garlic
  • 1 Tablespoon rice vinegar
  • 2 Tablespoons honey
  • 3 Tablespoons tomato sauce
  • 2 Tablespoons brown sugar
  • 4 Tablespoons soy sauce
  • 2 Tablespoons sesame seeds
  • 2 Tablespoons sliced green onions
  • White rice for serving

PREPARATION

  1. Place the chopped chicken in a bowl along with the garlic, paprika, cumin, salt and pepper. Mix well.
  2. Place the eggs in a bowl and lightly beat them, set aside.
  3. In another bowl, mix the corn starch and flour.
  4. Heat a frying pan over medium heat and add the oil.
  5. Dip each piece of chicken in the egg mixture, then in the flour. Repeat the process with all the chicken.
  6. Add 7-8 pieces of chicken to the skillet. Cook for 5 minutes or until crispy and golden brown. Repeat the process with the rest of the chicken. Drain chicken on paper towels.
  7. For the sauce: heat the oil in a frying pan over medium heat. Add the garlic and cook for 30 seconds. Add the sauce ingredients, stir and cook for 3-4 minutes or until the sauce thickens slightly.
  8. Add the crispy chicken to the skillet and stir to coat with the sauce. Sprinkle with sesame seeds and green onions.
  9. Serve with rice, enjoy!

  • Black pepper to taste

PREPARATION

  1. In a large bowl, add the chopped cucumber, a teaspoon of salt and mix well. Let stand for 1 hour.
  2. In a saucepan add the vinegar, water, sugar and mix well. Cook over medium heat for about 5-6 minutes; let cool.
  3. Strain the liquid from the cucumbers with the salt.
  4. Add the chopped onion, the chopped dill, pepper to taste and the dressing to the cucumbers. Mix well and refrigerate covered until serving. Enjoy!

INGREDIENTS
  • 3/4 Cup granulated sugar
  • 3/4 Cup brown sugar
  • 1 Cup butter at room temperature
  • 2 Eggs
  • 2 Teaspoons vanilla
  • 2 1/2 Cups all-purpose flour
  • 1 Teaspoon baking soda
  • 2 Teaspoons ground cinnamon
  • ½ Teaspoon nutmeg
  • 1/2 Teaspoon salt
  • 2 Cups grated carrots
  • 1 Cup chopped walnuts or pecans
  • 1/2 Cup raisins
  • 8 Ounces cream cheese at room temperature
  • 1 1/2 Cups powdered sugar
  • 1/3 Cup heavy whipping cream
  • 1 Teaspoons vanilla extract

    PREPARATION

    1. Preheat oven to 350°F.
    2. Add butter, brown sugar and granulated sugar in a large bowl, beat for 5 minutes with a mixer until pale and creamy.
    3. Add eggs and vanilla extract. Beat until well combined.
    4. Mix flour, cinnamon, nutmeg, baking soda and salt in a medium bowl.
    5. Gradually add flour mixture to butter mixture with mixer on low speed. Beat until well combined, about 1 minute. Stir in the carrots, walnuts, raisins and mix.
    6. Drop by spoonfuls of batter onto prepared baking sheets with a silicone baking mat, at least 2 inches apart.
    7. Bake your cookies rotating halfway through baking, until lightly browned on the edges, 12 to 14 minutes.
    8. Cool the cookies on the pans for 3 minutes. Transfer to a wire rack to cool completely, about 30 minutes.
    9. For the frosting: in a large bowl, beat the cream cheese until creamy. Gradually add the powdered sugar and mix. Pour in the cream, vanilla and beat for 1 minute more until creamy. Chill covered until ready to decorate the cookies.
    10. Place a spoonful of frosting on the top of each cookie and spread. You can add chopped nuts or make a sandwich by joining two cookies together. Enjoy!

    This is one of my favorite recipes for those days when I want to enjoy a delicious dinner that is easy and doesn't require a lot of prep time. You can prepare this pasta in advance and heat it up at the time of serving, join us!

     

    TOTAL PREPARATION TIME: 40 minutes
    SERVINGS: 4-5
    COURSE: Lunch/Dinner

    INGREDIENTS
    • 1 lb. uncooked penne or rigatoni (You can use the paste of your choice)
    • 1 Medium onion, chopped
    • 1 Pound extra lean ground beef
    • Tablespoon olive oil
    • Cloves garlic, crushed
    • 1 1/2 Teaspoon dried oregano
    • 1.5 Cups tomato sauce
    • Salt and pepper to taste
    • 2 Cups shredded cheddar cheese

    PREPARATION

    1. Preheat your oven to 400°F.
    2. In a hot skillet over medium-high heat add the oil, beef, onion and garlic, mix breaking up the meat with a meat chopper as you go, for 10 minutes.
    3. Stir in tomato sauce, oregano, salt and pepper to taste. Cook covered for 10 more minutes.
    4. Cook the pasta for 10 minutes (it should be a little raw so it doesn't get mushy in the oven cooking). Drain the pasta and pour it into the baking dish.
    5. Pour the meat mixture on top and then toss until combined with the pasta. Top with an even layer of cheese.
    6. Bake for 10 minutes, uncovered, until the cheese is well melted.
    7. Serve immediately and enjoy!

    3. Serve chicken in tortillas, add tomato, onion, avocado, cilantro and lime. You can add the sauces of your choice, enjoy!

      INGREDIENTS
       
      For The Filling:
      • 1 Teaspoon vanilla extract
      • 250 g Cream cheese at room temperature
      • 1/2 Cup powdered sugar
      • 300 ml Whipping cream
      • 1 Tablespoon gelatin
      • 4 Tablespoons water
      • 2 Mangos, peeled and diced
      For The Base:
      • 150 g Cookies
      • 80 g Melted butter
      For The Topping:
      • 3/4 Cup mango curd
      • Whipped cream

      PREPARATION

      1. Crush the cookies and add the melted butter, combine well. Press into the base of a 9-inch springform pan. Chill for 15 minutes or until firm.
      2. In a large bowl beat cream cheese, vanilla and sugar until smooth and creamy. Fold in the cream.
      3. Whisk the gelatin and water in a bowl, let stand 3 minutes to hydrate. Dissolve the hydrated gelatin in a bain-marie.
      4. Add 1/4 cup of the cream cheese mixture to the gelatin mixture, then add to the remaining mixture and mix well.
      5. Pour half of the cream cheese mixture over the cookie base. Top with diced mango, then top with remaining cream cheese mixture. Refrigerate overnight or until firm (about 4 hours).
      6. Pour Mango Curd over cooled cheesecake and smooth. Garnish with whipped cream to taste. Enjoy!

      INGREDIENTS
      • 2 Large eggs
      • 2 Tablespoons butter
      • 1/2 Teaspoon garlic powder or a crushed garlic clove
      • 1 Pinch of salt and ground black pepper to taste
      • 2 Slices of bread of your choice
      • 1 Ounce Swiss cheese, sliced
      • ½ Ripe avocado, sliced
      • Optional: lettuce, sliced tomato, or vegetables of your choice

      PREPARATION

      1. Heat water in a saucepan.
      2. Break the egg into a cup and set aside.
      3. When the water is about to boil, make a whirlpool with the help of a spoon or some rods and drop the egg in the center of the whirlpool, delicately.
      4. Cook for 4 minutes. Remove with a skimmer and sprinkle with salt to taste. Set aside.
      5. Mix the butter and garlic; spread the bread with the butter and toast it in the oven or in a frying pan.
      6. To assemble: Place on the bread, the cheese, lettuce (or vegetables of your choice), then the avocado and poached egg.
      7. Sprinkle with freshly ground pepper and place the other slice of bread.
      8. Note: you can include a layer of fried bacon, more cheese and even a sauce of your choice, I particularly like to include guacamole when eating. Enjoy!

      • Olive oil
      Toppings idea:
      • Extra virgin olive oil
      • Tomato sauce (smooth or pureed)
      • Bacon
      • Firm mozzarella cheese, grated
      • Fresh, soft mozzarella cheese, separated into small pieces
      • Grated Parmesan cheese
      • Feta cheese, crumbled
      • Mushrooms, thinly sliced.
      • Peppers, very thinly sliced
      • Italian sausage
      • Sliced black olives
      • Fresh basil, chopped
      • Pesto
      • Pepperoni, thinly sliced
      • Onions, thinly sliced, raw or caramelized
      • Ham, thinly sliced

      PREPARATION

      1. Pour all-purpose flour into a large bowl or electric mixer.
      2. Add the salt, yeast and beat well.
      3. Add the water, cup by cup, and mix continuously until you get a fluffy consistency in your dough. Cover and let stand for 5 minutes.
      4. Make a round shape with the dough and place it on the Zulay Kitchen silicone baking mat or on a greased mat so it doesn't stick.
      5. Divide the dough into 6 equal pieces with the Zulay Kitchen bench scraper.
      6. Place each piece of dough on the silicone baking mat and roll out the dough into a thin circular shape with the rolling pin.
      7. Add the olive oil and toppings of your choice.
      8. Bake at 525° F for 7 to 12 minutes. Serve and enjoy!

      • ¼ Cup shredded coconut flakes (optional)

      PREPARATION

      1. Preheat oven to 325°F.
      2. Heat sugar in small saucepan over medium heat, stirring constantly until melted and golden brown; Pour into an 8-inch round pan or eight ramekin (4 oz); let cool.
      3. Combine coconut milk, condensed milk, evaporated milk, eggs, cinnamon and vanilla in a blender. Divide the egg mixture evenly among the molds.
      4. Place the molds in a shallow baking dish and place them on the middle rack of the oven. Pour in enough hot water to come halfway up the sides of the molds; cover with foil. 
      5. Bake for 50 minutes or until a table knife inserted in the center comes out clean.
      6. Using tongs, carefully remove the molds from the water, transfer to the refrigerator to cool completely. 
      7. When ready to serve, gently run a butter knife around edges and invert onto serving plates. Garnish with whipped cream or coconut flakes and enjoy!

          Chicken Parmesan! These are delicious chicken milanesas breaded with parmesan cheese and bread crumbs, which are then baked covered with tomato sauce and mozzarella cheese until gratin. They are a real treat, ideal for lunch or dinner and go very well with pasta, vegetables or salads. This is my favorite way to eat chicken, it is very easy to prepare and its flavor is unique, try it and you will love it, join us!

          COURSE: Lunch/Dinner

          INGREDIENTS
          • 2 Chicken breasts cut in half horizontally to make 4 fillets
          • 3 Crushed garlic cloves
          • Salt and pepper to taste
          • 2 Eggs
          • 3/4 Cup bread crumbs
          • 1/2 Cup shredded Parmesan cheese
          • 1/2 Cup prepared tomato sauce
          • 1 Cup mozzarella cheese
          • Olive oil

          PREPARATION

          1. Preheat an oven to 450° F (230° C).
          2. Season the chicken well with garlic, salt and pepper, set aside.
          3. Beat the eggs in a shallow bowl and set aside.
          4. Mix bread crumbs and 1/2 cup Parmesan cheese in a separate bowl; set aside.
          5. Dip one chicken breast in beaten eggs. Transfer breast to breadcrumb mixture, pressing crumbs into both sides. Repeat for each side and set aside.
          6. Add oil to a large skillet over medium-high heat, add the breaded chicken and cook until golden brown on both sides. The chicken will finish cooking in the oven.
          7. Transfer the chicken to a baking dish. Top each breast with 2 tablespoons tomato sauce and mozzarella cheese.
          8. Bake until the cheese is golden brown and bubbly and the chicken breasts are no longer pink in the center, 15 to 20 minutes.
          9. Serve and enjoy!
