    • 1 bag of riced broccoli and cauliflower mix
    • 1 bag of riced cauliflower
    • 2 eggs
    • 1 cup vegan mozzarella (or regular if you prefer)
    • 1/2 white onion, diced
    • Himalayan salt, black pepper, and garlic powder to taste
    • Garlic-infused olive oil (or regular olive oil for sautéing)

Instructions

1. Cook the onion. In a skillet over medium heat, sauté your diced onion in garlic-infused olive oil until soft and fragrant (about 5 minutes).

2. Heat the veggies. Microwave or lightly steam both bags of riced veggies until just tender. Don’t overcook—just soften them enough to mix easily.

3. Combine ingredients. In a large mixing bowl, add the softened riced veggies, cooked onion, vegan mozzarella, eggs, and seasoned coating mix. Get your salt and pepper grinder, then sprinkle in your salt, pepper, and garlic powder to taste.
