Keto Spice Cake Cupcakes

What You Need

A set of mixing bowls.

A whisk or hand mixer.
Ingredients

4 Tbs butter softened

¼ Cup monk fruit

⅓ cup Swerve granular or confectioner

1 tbsp cinnamon
-
1 tsp ginger
-
¼ tsp cloves,
-
¼ tsp nutmeg
-
1 tsp vanilla
-
2 eggs
-
½ cup sour cream or heavy cream

¼ tsp salt
-
2 cups almond flour
-
2 tsp baking powder

Spice mix
Preparation

Mix butter, monk fruit and Swerve with hand mixer for 20 seconds.

Beat the eggs, the vanilla and ½ cup sour cream or heavy cream in a bowl.

Pour the cinnamon, the ginger, the cloves, the nutmeg and the salt into a small bowl.

In a large bowl mix the cups of almond flour, the baking powder and the spice mix, by hand.

Add the wet ingredients and slowly mix them together with a spatula until they are smooth.

Pour into cupcake forms and bake at 350° for 15 min or until a “toothpick test” comes out clean.

- 1 Brick cream cheese in a bowl
- Blend to taste with about ½ cup confectioners *Swerve sugar substitute.
- 1 tsp vanilla
- About 2 tbsp liquid. Either orange juice, milk or cream. Blend until frosting consistency. It should be spreadable.
