How do I make Roast Potatoes Crispy?

There are a couple secrets to make roast potatoes crispy: 

  1. Make sure your oven is at 425 degrees Fahrenheit and not higher than that. On the contrary, potatoes will be cooked really fast on the outside and not enough on the inside. 

  2. Use dried herbs for seasoning to avoid burnt vegetables or vegetable juices, since these will soft down your potatoes. 

  3. Make sure to flip your potatoes with a spatula in the middle of the roasting process so that they can crisp on both sides. 

 

Garlic Roasted Crispy Red Potatoes


Ingredients

  • 3 lbs of small red potatoes cut into half or quarters

  • 1/3 cup olive oil

  • About 5 cloves of garlic (chopped or grated)

  • 1/2 lemon (juice)

  • 1 tsp salt or to taste

  • 1 tsp dried rosemary

  • 1 tsp black pepper

  • 1 tsp dried basil

  • 1 tsp dried oregano

  • 1 tsp dried parsley flakes

  • 1 tsp onion powder

  • 1 tsp paprika

  • 1/2 tsp ground chili powder

Preparation

  1. Preheat oven to 425°F.

  2. Cut potatoes into half or quarters, then rinse thoroughly and pat dry to then transfer into a mixing bowl.

  3. Add the olive oil and garlic, salt, black pepper, dried basil, dried oregano, dried parsley flakes, onion powder, paprika , ground chili powder (optional), and squeeze half juice of lemon and mix.

  4. Transfer potatoes into a sheet pan and spread out into 1 layer.

  5. Roast in the oven for about 40-45 minutes or until they are cooked thoroughly and crisp. Make sure to flip once or twice during the baking process to get them evenly brown.

  6. Remove the potatoes to a serving plate and enjoy while hot. Add additional seasoning if needed.
