Spring Rolls Recipe

This spring rolls recipe is easy, delicious, and fresh, it will be one of your spring and summer favorites! This version of spring rolls is filled with fresh vegetables such as carrots, lettuce, red cabbage, cucumber, a mix of herbs, and rice vermicelli and you can use shrimp. These finely chopped vegetables are wrapped with a rice sheet and accompanied by a tasty peanut sauce, all a delight!
This recipe is practical and will be a great solution for dinner or to enjoy on those hot days when you need something cool and refreshing.

Spring Rolls:

  • 8 Sheets of rice paper
  • 2 Ounces rice vermicelli 
  • 1 Teaspoon toasted sesame oil.
  • 1 Cup lettuce
  • 1 Cup red cabbage, finely chopped
  • 2 Medium carrots, peeled and shredded with a julienne peeler
  • 1 Small cucumber, thinly sliced or cut into strips with a julienne peeler
  • 2 Medium jalapeño peppers, cut into thin slices
  • 1 Pound large shrimp, peeled, deveined, and cooked (optional)
  • 1/4 Cup thinly sliced green onions
  • 1/4 Cup coarsely chopped fresh cilantro
  • 1/4 Cup coarsely chopped fresh mint

Peanut Sauce:

  • 1/2 Cup peanut butter
  • 2 Tablespoons soy sauce
  • 1 Tablespoon rice vinegar
  • 2 Tablespoons brown sugar
  • 2 Teaspoons chili sauce
  • 1 Tablespoon fresh lime juice
  • 2 Garlic cloves pressed
  • 1 Tablespoon ginger root grated
  • 2-4 Tablespoons warm water


  1. Bring water to boil and cook the noodles until al dente, according to package directions. Drain, add cold water and drain again, add the sesame oil and set aside.
  2. Fill a shallow bowl (a pie pan or deep dish) with two centimeters of water.
  3. Place a piece of rice paper in the water and let it stand for about 20 seconds.
  4. Spread it carefully on the countertop or on a flat surface, it should be quite firm.
  5. Leaving about 2.5 cm of rice paper open around the edges, cover the bottom third of the paper with the vegetables (2 pieces of each), herbs, the rice vermicelli and filleted shrimp.
  6. Fold the bottom edge over the filling, rolling it up until the filling is compact. Fold in the short sides like a burrito. Finally, roll up. Repeat with the rest of the ingredients.
  7. For the peanut sauce: put all the ingredients in a bowl and mix well until smooth.
  8. Serve the spring rolls with the peanut sauce and enjoy!
