Chocolate Covered Strawberry Mochi INGREDIENTS

  • 8 Small Strawberries
  • 3/4 Cups of Semi -Sweet Dark Chocolate Chips
  • Mochi
  • 1 Cup Sweet Rice Flour
  • 1/4 Cup of Sugar
  • 1 1/4 Cup of Water
  • Pinch of salt
  • Few tablespoons of Cornstarch for your working surface





For the Chocolate Covered Strawberries

  1. Prepare your strawberries by washing, hulling, and drying them.
  2. Melt the chocolate chips over a double boiler (or in the microwave if you prefer!)
  3. Dip strawberries in a thin layer of chocolate until covered, and set aside on parchment paper.
  4. Once all strawberries are covered, leave in refrigerator to cool and set for 2 hours.

For the Mochi

  1. Combine Sweet Rice Flour, Sugar, Salt, and water in a glass bowl.
  2. Stir to ensure there's no lumps remaining.
  3. Heat in microwave for 2-3 minutes (depending on power level)
  4. Remove from microwave and stir (use a silicone spatula to reduce the stickiness!)
  5. Heat in microwave again for another 2-3 minutes.
  6. Remove from microwave and stir one last time.

Putting it Together

  1. While allowing your mochi mixture to cool a bit, sprinkle Cornstarch on your working surface to ensure it's well covered.
  2. Once mochi mixture is cooled to a comfortable temperature, use your spatula to place a generous chunk of mochi onto your working surface.
  3. Coat your hands with cornstarch and begin flattening the mochi into a circular disc.
  4. Place the strawberry in the middle, and wrap the surrounding mochi by pinching the sides.
  5. Repeat the process and you've got yourself a tray of delicious treats!

Additional Tips

  • I recommend using smaller strawberries so they're easier to handle and wrap.
  • Allow your mochi to cool a bit before handling so you don't burn your hands, and also to prevent it from melting the chocolate covered strawberries.
  • Keep the chocolate covered strawberries in the fridge and work in small batches to prevent melting.
  • Don't be afraid to use a lot of cornstarch, it really helps everything become less sticky and easier to work with.
  • I found that it's best to lower your microwave power level to 50% for the mochi mixture - but feel free to experiment and see what works best for you.
