3 INGREDIENT KETO CLOUD BREAD RECIPE 
INGREDIENTS 

PREPARATION 

  • Preheat oven to 150 degrees C. 

  • Place cream cheese in a microwave-safe bowl and warm in the microwave at 10-second intervals until softened, about 30 seconds. Cool to room temperature, about 5 minutes. Mix in egg yolks until smooth.
  • Place egg whites and baking powder in bowl; beat together until stiff peaks form.
  • Fold yolk mixture gently into egg whites until batter is just combined and light yellow in color.
  • Scoop batter into 4-inch rounds on baking sheet, flattening peaks with the back of the spoon.
  • Bake in the preheated oven until golden brown, 17 to 20 minutes.
  • Remove from oven and let cool! 

BAKED MOZZARELLA STICKS

      INGREDIENTS 

  • Mozzarella string cheese sticks
  • A couple spices- dried basil and garlic powder
  • Grated Parmesan cheese
  • An egg

     PREPARATION 

  • Cut the mozzarella string cheese in half.
  • Put your Parmesan cheese, garlic powder, and basil in a small bowl.
  • Put the egg in a small dish and use a fork to whisk it together.
  • Start dipping the mozzarella pieces. First on the Parmesan cheese, then on the egg and again on the Parmesan cheese. 
  • Place the mozzarella pieces on the baking sheet leaving a few inches between each piece.
  • Place the trays in the freezer for 1 hour.
  • When you are ready to make the sticks, preheat the oven to 200 degrees C. When you have preheated the oven, place the trays in the oven and cook for 8 to 10 minutes, flipping them half way through.
  • Remove from oven and let cool a bit and enjoy!. 

SUGAR-FREE BLACKBERRY CHIA SEED JAM 

INGREDIENTS 

  • Blackberries: Fresh or Frozen
  • Lemon juice
  • 0-calorie sweetener
  • Chia seeds

PREPARATION 

  • Combine 2 cups of berries and a little lemon juice and put in a large saucepan over medium heat.
  • Bring to a boil, then let it simmer for a few minutes until the berries begin to break down.
  • Remove the pan from the heat and stir in 2 tablespoons of sweetener.
  • Add 2 tablespoons of chia seeds, stir, then remove from the heat and let stand. The chia seeds will soften, create a gel, and work to set the jam in about 15 minutes.

INGREDIENTS 

  • 400g of uncooked medium shrimp, peeled and deveined.
  • 2 to 3 garlic cloves.
  • 1/4 cup butter.
  • 1/2 lemon.
  • Fresh parsley.

PREPARATION 

  • Finely mince the garlic. 
  • Mince the parsley.
  • Squeeze 1/2 lemon in a cup. 
  • Put the pan on a medium heat and add the butter. 
  • Sauté the shrimp and garlic in butter until  the shrimp becomes pink (5 minutes).
  • Add lemon juice; heat through.
  • Serve, sprinkle with parsley and enjoy!

PREPARATION

  • Blend this in the blender on liquify and add ¼ cup non fat greek yoghurt.
  • And 2 tbls milk.
  • Blend until very smooth.
  • Return mixture into the pot and add 1 ½ cup shredded cheddar cheese and heat slightly stirring constantly. 
  • Add 1 tsp garlic and salt to taste.    
The batch is rich and creamy and fairly low in calories.  Use it as a dip or part of a cheese souffle, or mix it in with macaroni.

How do I make Roast Potatoes Crispy?

There are a couple secrets to make roast potatoes crispy: 

  1. Make sure your oven is at 425 degrees Fahrenheit and not higher than that. On the contrary, potatoes will be cooked really fast on the outside and not enough on the inside. 

  2. Use dried herbs for seasoning to avoid burnt vegetables or vegetable juices, since these will soft down your potatoes. 

  3. Make sure to flip your potatoes with a spatula in the middle of the roasting process so that they can crisp on both sides. 

 

Garlic Roasted Crispy Red Potatoes


Ingredients

  • 3 lbs of small red potatoes cut into half or quarters

  • 1/3 cup olive oil

  • About 5 cloves of garlic (chopped or grated)

  • 1/2 lemon (juice)

  • 1 tsp salt or to taste

  • 1 tsp dried rosemary

  • 1 tsp black pepper

  • 1 tsp dried basil

  • 1 tsp dried oregano

  • 1 tsp dried parsley flakes

  • 1 tsp onion powder

  • 1 tsp paprika

  • 1/2 tsp ground chili powder

Preparation

  1. Preheat oven to 425°F.

  2. Cut potatoes into half or quarters, then rinse thoroughly and pat dry to then transfer into a mixing bowl.

  3. Add the olive oil and garlic, salt, black pepper, dried basil, dried oregano, dried parsley flakes, onion powder, paprika , ground chili powder (optional), and squeeze half juice of lemon and mix.

  4. Transfer potatoes into a sheet pan and spread out into 1 layer.

  5. Roast in the oven for about 40-45 minutes or until they are cooked thoroughly and crisp. Make sure to flip once or twice during the baking process to get them evenly brown.

  6. Remove the potatoes to a serving plate and enjoy while hot. Add additional seasoning if needed.

Almond Biscotti Recipe

Ingredients

DRY INGREDIENTS:

  • 1 ¾ cups almond meal flour

  • ½ cup oatmeal bran

  • ¾ cup monk fruit sweetener (with erythritol)

  • 1 tsp baking soda

  • ¾  cups chopped pistachios

WET INGREDIENTS:

  • 2 large eggs

  • 1/2 tsp. vanilla

  • 1/2 tsp. almond extract

  • 3 tbsp. almond butter

  • 3 tbsp. coconut oil

Preparation

  1. Measure the dry ingredients into the large mixing bowl.

  2. Cut the coconut oil and almond butter into the dry mix.

  3. Crack the eggs into the smaller bowl.

  4. Add the almond and vanilla extracts into the eggs and whisk together like scrambled eggs.

  5. Add the eggs into the almond flour and stir. 

  6. Add the pistachios. It will be stiff like bread dough. I kneaded the dough briefly to ensure all was mixed through.

  7. Prepare the baking dish with coconut oil and put the dough onto it. 

  8. Shape into an oval dome.

  9. Bake in a preheated oven of 335° for about 30 min. It should not be soft at the top when done, and a knife should be clean when inserted.

  10. Let this cool completely before cutting your biscotti into ¾ inch slices.

  11. Lay these onto a buttered baking sheet and bake again at 335° for about 15 min. They will become like toast.

  12. Let them cool. Top with chocolate sauce, but they can be sprinkled with powdered sugar or just cocoa powder. 

Enjoy with coffee or your favorite tea!

    Indian Spiced Cauliflower Wings Recipe

    Ingredients

    • 1 head of cauliflower

    Sauce Ingredients

    • 2 tbsp tamari (substitute - soy sauce)
    • 1 tbsp chili garlic sauce
    • 1 tbsp apple cider vinegar
    • 1 tbsp maple syrup
    • 1.5 tsp arrowroot starch
    • 3 tbsp water

    Batter Ingredients

    • ½ cup whole wheat pastry flour (substitute all-purpose flour)
    • tbsp corn flour (substitute all-purpose flour)
    • ½ cup plant-based milk (or milk of your choice)
    • ½ cup water
    • ½ tsp turmeric
    • tsp cumin powder
    • tsp coriander powder
    • ½ tsp garam masala
    • ½ tsp red chili powder (adjust for spice)
    • 1.5 tsp garlic powder
    • ½ tsp paprika
    • ½ tsp cayenne
    • ½ tsp black pepper
    • salt

    Green Chutney Ingredients

    • 2 medium tomatoes, roasted
    • 1 cup coriander
    • 2 garlic cloves
    • 2 green chilis (add one more for more spice)
    • 5-10 mint leaves
    • 1 tsp lemon juice
    • salt to taste

    Instructions

    1. Preheat oven to 425 F.
    2. Chop cauliflower into florets.
    3. Mix all batter ingredients together, adding the milk and water last.
    4. Coat cauliflower in batter, place on a baking sheet, and bake for 22-25 minutes. Flip the florets half way.
    5. Make the sauce by combining everything in a small bowl. Thicken it for a couple minutes on the stove.
    6. Use tongs to coat the baked cauliflower in the sauce. Bake for another 15-20 minutes or even longer for more crispness.
    7. For the chutney, just blend all the ingredients together in a small processor.
    8. Enjoy!!!
