This pasta salad is very fresh, delicious and easy to prepare.
I love to prepare this salad in spring and summer, for outdoor meals that don't require a lot of preparation or as a dinner idea when I want to enjoy something tasty and quick to prepare. You can serve it with meat, chicken, tuna or on its own and it looks great! It has a delicious harmony of flavors and textures thanks to the vegetables and cheese, try it!

 

TOTAL PREPARATION TIME: 20 minutes
SERVINGS: 5-6
COURSE: Lunch/Dinner

INGREDIENTS
  • 3 Cups cooked pasta of your choice
  • 2 Cups of halved cherry tomatoes
  • 1 Cup cucumbers, cut into thin half-moons
  • 1 Cup broccoli, boiled and drained
  • 1 Cup crumbled feta cheese (or the one of your choice)
  • 1/4 Cup basil leaves
  • 1/4 Cup chopped parsley
  • 1/4 Cup chopped mint
  • 1/4 Cup toasted pine nuts
For the dressing:
  • 1/4 Cup olive oil
  • 5 Tablespoons lemon juice
  • 1 Teaspoon Dijon mustard
  • 3 Cloves garlic, crushed
  • Salt and black pepper to taste

PREPARATION

  1. In a large bowl, add all the salad ingredients.
  2. For the vinaigrette: in a small bowl mix the olive oil, lemon juice, mustard, garlic, salt and pepper.
  3. Pour dressing over salad and toss to coat. Adjust seasoning and serve.
Note: You can use the vegetables of your choice to give a personalized touch to the salad.

INGREDIENTS
  • 3 Cucumbers, thinly sliced
  • 1 Teaspoon salt
  • 1 Red onion, thinly sliced
  • 1/2 Cup white vinegar
  • 1/4 Cup water
  • 1/4 Cup granulated sugar
  • 2 Tablespoons chopped fresh dill
  • Black pepper to taste

PREPARATION

  1. In a large bowl, add the chopped cucumber, a teaspoon of salt and mix well. Let stand for 1 hour.
  2. In a saucepan add the vinegar, water, sugar and mix well. Cook over medium heat for about 5-6 minutes; let cool.
  3. Strain the liquid from the cucumbers with the salt.
  4. Add the chopped onion, the chopped dill, pepper to taste and the dressing to the cucumbers. Mix well and refrigerate covered until serving. Enjoy!

  • 3 Pounds of potatoes diced

  1. Place diced potatoes in a large pot and add enough water to cover the potatoes. Cook over medium-high heat for 8-10 minutes or until potatoes are tender. Drain and set aside until cool.
  2. In a large bowl combine olive oil, lemon juice, garlic, mustard, shallot, dill, salt and pepper to taste; mix well.
  3. Add the potatoes and parsley to the dressing; toss to coat well.

  • 1 Pound of pumpkin cut into chunks
  • 8 Tablespoon olive oil
  • 1/2 Cup toasted pumpkin seeds
  • 1 Teaspoon sesame seeds, toasted
  • 1 Teaspoon ground cumin
  • 1 Teaspoon paprika
  • 3 Cloves of crushed garlic
  • 150 g White cheese or feta cheese
  • 1 Avocado, diced
  • 2 Cups of mixed lettuce
  • 2 Tablespoons balsamic vinegar
  • 1 Teaspoon honey
  • Salt and pepper, to taste

    PREPARATION

    1. Preheat the oven to 390F.
    2. In a bowl mix together the ground paprika, garlic, 4 tablespoons of olive oil, cumin, salt and pepper to taste; mix well.
    3. Place the pumpkin pieces on a baking sheet lined with baking paper and drizzle with the oil and seasoning mixture. Stir with your hands to make sure all the pieces are coated and arrange them in a single layer on the tray.
    4. Bake for 25 minutes, turning halfway through, until golden brown and tender. Remove from the oven and allow to cool.
    5. For the dressing place in a bowl 4 tablespoons of oil, the balsamic vinegar, honey, salt and pepper to taste; mix very well.
    6. Arrange the salad ingredients in a bowl, drizzle with the dressing and toss lightly.
    7. Serve and enjoy!

      Easy Tuna Pasta Salad Recipe



      Today we want to share with you a delicious cold tuna and pasta salad, with a fresh touch of vegetables. Join us!


      INGREDIENTS

      • 100 Grams of short pasta (the one you prefer)
      • 2 Cans of tuna
      • 1 Crushed garlic cloves
      • ½ Onion cut in feathers
      • 7 Cherry tomatoes chopped in half
      • Some fresh lettuce leaves
      • 1 Cucumber cut in slices
      • 1 Teaspoon of mustard
      • 1 Teaspoon of honey
      • Salt and pepper to taste
      • Olive oil
      • Balsamic vinegar

      PREPARATION

      1. Add water to a pot and a teaspoon of salt, once boiling add the pasta and cook according to package directions. Strain and let cool.
      2. In a large bowl add the tuna cans without the liquid, the onion, cucumber, lettuce, tomatoes and the cold pasta.
      3. In another bowl mix well 2 tablespoons of vinegar, sugar, mustard, garlic, salt, pepper and 5 tablespoons of olive oil.
      4. Add the vinaigrette to the pasta (to your taste) and mix so that all the ingredients are well impregnated.
      5. Serve and enjoy!

      Today we want to share with you the recipe of a very tasty and easy to prepare salad. Join us!

      INGREDIENTS

      • 2 Kilos of peeled potatoes
      • 1 Kilos of peeled carrots
      • 1 Chicken breast
      • 1 Cup of peas
      • 1 Cup diced onion
      • 1 Peeled and diced red apple
      • 2 Peeled and diced hard-boiled eggs
      • 1 Cup mayonnaise
      • Tablespoon mustard
      • 3 Cloves of crushed garlic
      • 1 Teaspoon oregano
      • 1/2 Teaspoon cumin
      • Chopped fresh cilantro
      • Salt and pepper to taste

      PREPARATION

      1. Wash the chicken breast very well and put it in a pot with water, along with a teaspoon of salt, cumin, oregano and garlic. Cook over medium-high heat for 20 to 25 minutes or until cooked.
      2. Place the peeled potatoes in a large pot, add a teaspoon of salt and cover with water. Boil the potatoes until tender.
      3. Place the carrots in another pot and boil them in water with a teaspoon of salt until tender.
      4. Drain the potatoes and carrots very well from the cooking water and, once cool, dice them and set aside in a large bowl.
      5. Add the peas, diced chicken breast, onion, apple and chopped eggs.
      6. Add the mayonnaise and mustard, mix well. (Add more mayonnaise if you prefer the salad to be a little more moist).
      7. Season the salad with salt and pepper to taste.
      8. Serve the salad and add some chopped fresh cilantro. Enjoy!
