Tomato Pie Recipe

Tomato pie is a delight, prepare it to share with the family or for those moments of celebration with friends. This recipe is very easy to prepare, the crust is crispy and the filling features soft chunks of tomato covered with a mixture of cheeses and spices, my goodness! You have to try this tomato pie, you will include it in your list of favorite recipes just like me.
Definitely an easy meal for the family, you can fast forward many of the preparation steps and bake the cake 30 minutes before the family gathers to enjoy and share. Join us to prepare this delicious tomato pie!

 

TOTAL PREPARATION TIME: 1 Hour 20 minutes
SERVINGS: 7-8
COURSE: Lunch/Dinner

INGREDIENTS
For the filling:
  • 6 Ripe tomatoes cut in slices
  • 1 Tablespoon salt
  • 1 Cup shredded cheddar cheese
  • 1-1/2 Cups shredded mozzarella cheese
  • 1/2 Cup mayonnaise
  • 1/4 Cup chopped fresh basil
  • 1/2 Onion chopped in small cubes
  • 1 Teaspoon crushed garlic
  • Salt and pepper to taste
For the dough:
  • 500 g Plain flour
  • 250 g Cold butter
  • 100 ml Water

PREPARATION 

  1. In a bowl, put the flour, a pinch of salt and the cold butter in small cubes, and rub with your fingers until it looks like breadcrumbs. Pour 100 ml of cold water, mix and join with your hands to form a dough; flatten with your hands and chill for 10 minutes.
  2. Prepare a 9-inch baking pan by greasing it with butter or oil.
  3. Roll out the dough on nonstick paper until it is large enough to line the pan with a little excess (about 6 mm thick). Use it to line the pan and refrigerate for 15 minutes.
  4. Place tomatoes in a colander in the sink in a single layer, sprinkle with salt and let stand for 15 minutes.
  5. Use a paper towel to pat the tomatoes dry and make sure most of the excess juice is removed. Set aside.
  6. Preheat the oven to 350° F.
  7. Remove the mold from the refrigerator and with the help of a fork mark the surface of the bottom and sides of the dough. Place a sheet of aluminum foil over the dough and fill it with weights, such as dried beans or rice, to help hold the foil in place and the shape of the dough during baking.
  8. Bake for 15 minutes at 350° F. Remove the foil with the weight and set aside to assemble the pie.
  9. In a medium bowl add the grated cheeses, mayonnaise, fresh basil, onion, garlic, salt and pepper to taste; combine until well integrated. 
  10. To assemble the tart, add a layer of tomatoes on the tart base, cover the tomatoes with half of the cheese mixture and repeat this step.
  11. Bake the pie for 35 to 45 minutes, until the cheese begins to bubble and the crust is golden brown. Let stand for at least 15 minutes before slicing and serving. Enjoy!

    INGREDIENTS
    • 3 Tablespoons olive oil
    • 6 Tablespoons butter
    • 1 Teaspoon fresh parsley, chopped
    • 1 Teaspoon crushed garlic
    • 1 Teaspoon thyme, chopped
    • 1 Teaspoon rosemary, chopped
    • 1 Beef flat iron steak 
    • 1/8 Teaspoon salt
    • 1/8 Teaspoon pepper

    PREPARATION 

    1. Preheat oven to 125°F (51°C). 
    2. Using paper towels, pat both sides of steak dry. Drizzle with olive oil; season with salt and pepper to taste.
    3. Place an ovenproof skillet over medium heat, add 2 tablespoons of oil and place the steak in the center of the skillet and cook until a dark crust forms, about 1 minute. Using Zulay Kitchen tongs, turn over and cook for another 60 seconds.
    4. Place the skillet in the oven and cook until desired doneness is reached, about 6-7 minutes for medium-rare, turning once.
    5. To make the butter: combine the butter, parsley, garlic, thyme, rosemary, salt and pepper to taste in a medium bowl. Place the mixture on parchment paper and form into a log. Roll up in the parchment paper, twisting the ends to close. Refrigerate until ready to use.
    6. Remove the steak from the oven when it reaches your preferred doneness, let rest for 3-5 minutes and serve immediately with prepared butter. Enjoy!

    2. In a hot skillet over medium-high heat, add the butter, oil, garlic and sauté for about a minute, until fragrant.
    3. Pour in honey, water, soy sauce and lemon juice; stir well.
    4. When boiling add the salmon fillets to the sauce in the skillet; cook each fillet skin side down, for 3-4 minutes or until golden brown, while basting the top with the pan juices.
    5. Transfer the skillet to your broiler/grill oven for another 5-6 minutes, or until the top of the salmon is nicely browned and the salmon is cooked to your liking.
    6. To serve, drizzle with sauce and a squeeze of lemon juice or add sauce and sprinkle with sesame. Serve with steamed vegetables, over rice or with a salad. Enjoy!

    2. Add the chicken, tomato, spices, salt and pepper to taste. Cook for 10-15 minutes or until everything is cooked through.

    They can be made your way, for example you could add chicken, bacon, ham, different types of cheeses, etc. This is a basic and easy recipe which you can adjust to your tastes. It is ideal for sharing, everyone will love it. 

    Easy Scalloped Potatoes Recipe

    Total preparation time: 1 hour and 30 Minutes

    INGREDIENTS

    • 2 Tablespoons olive oil
    • 4 Tablespoons butter
    • 1 White onion, thinly sliced
    • 6 Crushed garlic cloves
    • 6 Tablespoons all-purpose wheat flour
    • 1/2 Cup chicken broth
    • 1 Cup whole milk
    • 1 Cup heavy cream
    • 2 Teaspoons thyme
    • 4 Pounds of potatoes, sliced
    • 2 Cups mozzarella cheese
    • 1 Cup Parmesan cheese
    • Salt and pepper to taste

    PREPARATION

    1. In a saucepan over medium heat, add the oil, butter and onion; sauté for 4-5 minutes until soft and translucent. Add the garlic and sauté for 1-2 minutes more until fragrant.
    2. Stir in the flour until well blended and cook for 1 minute more.
    3. Gradually pour in the broth and whisk until blended. Add the milk and cream, thyme, salt and pepper to taste; whisk until blended. Continue cooking for about 5 minutes more until the sauce thickens slightly (adjust salt and pepper to taste).
    4. Heat oven to 400°F and grease a 9 x 13-inch baking dish with oil (you can use individual baking pans or the one of your choice).
    5. Spread half of the cut potatoes in an even layer in the bottom of the pan. Top evenly with half of the cream sauce. Then sprinkle evenly with 1 cup shredded mozzarella cheese.
    6. Top evenly with the remaining cut potatoes, the other half of the sauce, the remaining cup of mozzarella cheese and the grated Parmesan (you can add more cheese if desired).
    7. Cover the pan with aluminum foil and bake for 30 minutes at 400°F. Then remove the foil and bake uncovered for an additional 30 minutes, or until the potatoes are cooked through.
    8. Remove from oven, let stand 5 minutes and serve. Enjoy!

    • 1 Whole chicken 2 kg
    • 100 g Butter
    • 1 Whole orange cut in quarters
    • Juice of one orange

    • 1 Sprig of fresh rosemary, chopped
    • 1 Sprig of thyme, chopped
    • 1 Teaspoon cumin
    • 1 Teaspoon paprika

    • 1/4 Cup chicken broth
    • 1/4 Cup white wine
    • Salt and pepper to taste

    PREPARATION

    1. Preheat the oven to 200°C / 400°F.
    2. Carefully loosen the skin of the chicken breast by sliding your fingers under the skin or with the back of a spoon. Place on a baking sheet.
    3. In a bowl, add the butter, garlic, rosemary, chopped thyme, cumin, paprika and chopped parsley; mix well.
    4. Rub the chicken all over with the herb butter, inside and out, even between the skin and the breast. Season the chicken well with salt and pepper to taste.
    5. Place the orange and onion pieces inside the chicken; add the wine, stock and orange juice to the pan with the chicken.
    6. Roast the chicken for 1 hour and 45 minutes or until well browned and juices run clear when pierced through the thickest part of the leg with a sharp knife.
    7. Let stand 10 minutes and serve. Enjoy!

    Ready, get set, roll! This easy to follow chicken pie recipe is absolutely mouthwatering. The crunchy crust and the soft chicken filling work together in great and tasty harmony. It definitely checks all the right boxes. Or should I say, all the right taste buds! 

    This dish is guaranteed to become a family favorite. Loaded with flavor, the combination of chicken and vegetables is heavenly. Most importantly, this recipe is simple to follow!

    Chicken Pie Recipe

    Prep time: 30 minutes

    Cook time: 40 minutes + 10 minutes to sit after cooking 

    Total time: 1 hour and 20 minutes

    Servings: 6 

    INGREDIENTS: 

    For the Filling:

    • 6 tablespoons olive oil
    • 1 leek (thinly sliced)
    • 1 onion (diced)
    • 1 carrot (cut into small cubes)
    • 1 cup green peas
    • 3 pounds of chicken breast (cut into cubes or strips) 
    • 1 teaspoon thyme 
    • 2 bay leaves
    • 3 tablespoons plain flour 
    • ½ cup white wine
    • 1 cup chicken broth
    • ½ cup heavy cream
    • Salt and pepper to taste

    For the dough:

    • 500g plain flour
    • 250g cold butter (cut in small cubes) 
    • 100ml water
    • 1 beaten egg 

    PREPARATION:

    1. In a hot saucepan over low heat, add the oil, leek, onion, carrots, herbs, peas, chicken, salt and pepper to taste and cook for 10 minutes. 
    2. Add the flour, mix, and cook for 3 minutes. Then pour the wine and boil for 2 minutes.
    3. Add the broth and cream, cook for 10 minutes until the chicken is ready and the sauce is thick and heavy. Season with salt and pepper to taste, remove from the heat and let cool completely.
    4. For the dough, pour the flour into a bowl, add a pinch of salt and the cold butter. Mix with your hands until the combination looks like breadcrumbs. Pour the cold water and mix to form the dough.
    5. Cut the dough into 2 pieces: ⅓ for the top and ⅔ for the base. Flatten with your hands and chill until needed.
    6. Preheat the oven to 375°F and grease a pan with butter or oil.
    7. Roll out the dough for the base on a nonstick sheet until it’s wide enough to line the pan. Once the pan is lined, spoon the filling and spread well. 
    8. Roll out the dough for the top until it’s wide enough to cover the pie. Brush the edge of the dough with beaten egg and fold over the overhang and press lightly to seal.
    9. Brush the top of the dough with beaten egg and make a small cut in the center. Bake for 40 minutes or until golden brown.
    10.  Let sit for 10 minutes after removing from the oven and serve.

    2. Place a large skillet over heat with 2 tablespoons of butter; add onion, garlic and sauté for about 5 minutes. Add mushrooms and continue to sauté for an additional 5 minutes; set aside.
    3. In the same skillet with 2 tablespoons of oil. brown the meat on each side for 1 minute; set aside.
    4. Return skillet to heat and melt remaining butter; add flour and stir.
    5. Stirring constantly, add 1-1/2 cups broth, Worcestershire sauce and mustard. Cook for 3 minutes over medium-low heat.
    6. Add the meat and onion mixture back to the skillet and simmer until the mixture thickens and is smooth, 6 to 8 minutes.
    7. Add the sour cream, season with salt and pepper to taste and bring to a boil. Remove from heat and set aside.
    8. Cook the pasta or noodles of your choice according to package directions and serve on a plate.
    9. On top of the pasta or noodles add a good amount of beef stroganoff and chopped fresh parsley. Enjoy!

    • 2/3 Cup milk
    • 2 Tablespoons butter
    • 1/4 Cup grated mozzarella cheese
    • 4 Tablespoons Parmesan cheese
    • Salt and pepper to taste

    PREPARATION

    1. In a large skillet over medium heat add the oil, onion, garlic, celery, bell bell pepper and cook for 2 minutes. Then add the mixed vegetables and cook for 3 minutes.
    2. Increase heat to high. Add meat and cook, breaking it up as you go, until browned.
    3. Add the flour and mix, then add the tomato paste, broth, red wine, thyme, cumin, bay leaf, salt and pepper.
    4. Cook for 30 minutes, stirring occasionally, until the sauce is reduced and thickened. Taste and then add more salt if desired.
    5. Transfer to a tart pan of your choice and preheat the oven to 180 ° C / 350 ° F.
    6. Cook the potatoes in boiling water with salt to taste for 15 minutes or until tender. Drain, return to the pot, add the butter and blend until smooth; then add the milk, mozzarella cheese, salt and mix well.
    7. Spread the puree over the meat in the pan, use a fork to give the surface a rough appearance. Sprinkle with Parmesan cheese and bake for 25 to 30 minutes or until browned on top and bubbling at the edges.
    8. Let stand for 5 minutes before serving, enjoy!

    Chicken Pie Recipe

    The chicken pie is a delight! With this pie recipe you can enjoy a creamy chicken covered with a crunchy and delicious crust, it is very easy to prepare and you will see that everyone loves it. Join in!


    INGREDIENTS

    For the filling:

    • 6 Tablespoons olive oil
    • 1 Leek, thinly sliced
    • 1 Onion, diced small
    • 1 Carrot cut into small cubes
    • 3 Pounds of chicken breast cut in cubes or strips
    • 1 Teaspoon thyme
    • 2 Bay leaves
    • 3 Tablespoons plain flour
    • 1/2 Cup white wine
    • 1 Cup chicken broth
    • 1/2 Cup heavy cream
    • Salt and pepper to taste

    For the dough:

    • 500 g Plain flour
    • 250 g Cold butter
    • 100 ml Water
    • 1 Beaten egg

    PREPARATION

    1. Add the oil in a hot saucepan over low heat along with the leek, onion, carrots, herbs, chicken, salt and pepper to taste, cook for 10 minutes.
    2. Add the flour, mix and cook for 3 minutes; pour in the wine, boil for 2 minutes and then add the broth, cream and cook for 10 minutes until the chicken is cooked and the sauce thickens. Season with salt and pepper to taste; remove from heat and let cool completely.
    3. In a bowl put the flour, a pinch of salt and the cold butter in small cubes, and rub with your fingers until it looks like breadcrumbs. Pour 100 ml of cold water, mix and then join with your hands to form a dough.
    4. Divide the dough into 2 pieces, you will need ⅓ for the top and ⅔ for the base; flatten with your hands and chill until needed.
    5. Preheat the oven to 375 °F and prepare the pan by greasing it with butter or oil.
    6. Roll out two-thirds of the dough on nonstick paper until it is large enough to line the pan with a little excess. Use it to line the pan, then spoon in the filling and spread well.
    7. Roll out the rest of the dough until it is large enough to cover the pie. Brush the edge of the dough with beaten egg and cover the tart to close it, then fold over the overhang and press gently to seal.
    8. Brush the top of the tart with beaten egg, make a small incision in the center to let steam escape and bake for 40 minutes or until golden brown.
    9. Remove from oven, let stand for 10 minutes and serve. Enjoy!
