Corned Beef And Cabbage! This dish is very delicious, prepare it and enjoy a tender meat accompanied by potatoes, carrots and cabbage; a real delight and the best thing is that everything is prepared together, it is very easy!
This recipe as well as the Irish soda bread is prepared in celebration of St. Patrick's Day; one of the things I like about Corned Beef is that because of the way it is cooked you can easily make as much as you want (without affecting the result) for all your guests, you have to try it!


TOTAL PREPARATION TIME: 2 Hours 40 minutes
SERVINGS: 6
COURSE: Lunch/Dinner

INGREDIENTS
  • 1 Corned beef brisket (4 pounds) with spice packet
  • 1 Onion
  • 3 Crushed garlic cloves
  • 2 Bay leaves
  • 3 Cups of water
  • 8 Small red potatoes
  • 4 Medium carrots
  • 1 Medium head cabbage, cut into wedges

PREPARATION

  1. Place corned beef in an iron pot and cover with water. Add the spice packet, onion, garlic and bay leaf; cover and bring to a boil. Reduce heat and simmer until corned beef is tender, about 2 hours.
  2. While the corned beef is simmering, cut the potatoes in half. Peel the carrots and cut them into chunks. Cut the cabbage into small pieces.
  3. Once the meat is tender, add the potatoes and carrots; cook until the vegetables are almost tender, about 10 minutes. Add the cabbage and cook about 15 minutes more.
  4. Remove the meat and vegetables from the pot. Slice the meat and serve with the potatoes, carrots and cabbage. Enjoy!

INGREDIENTS

  • 3 Tablespoon of oil
  • 2 pound Stewing beef
  • 1/4 Cup flour
  • 2 Medium onions, diced
  • 4 Crushed garlic cloves
  • 2 Tablespoons paprika
  • 2 Bay leaves
  • 800 ml Beef broth
  • 400 g Can of chopped tomatoes
  • Salt and pepper to taste
  • 1 Carrot
  • 3 Potatoes

PREPARATION

  1. In a large pot, add the oil and onion. Cook until transparent. Add the paprika and mix well.
  2. In a bowl, dredge the meat in flour. Add the meat to the onion mixture and cook for 10 minutes.
  3. Gradually add ¼ cup of the beef broth to remove the brown bits from the bottom of the pan. Then add the remaining broth, chopped tomatoes, potatoes, carrots, bay leaf, salt, and pepper to taste.
  4. Stir and bring to a boil, cover and reduce to a simmer for 1 ½ -2 hours or until tender.
  5. Serve and enjoy!

        INGREDIENTS

        • 2 Pounds of potatoes
        • 2 Cups of diced ham
        • 2 Cups shredded cheddar cheese
        • 3 Tablespoons butter
        • 1 Onion, chopped
        • 3 Cloves garlic, crushed
        • 1/2 Teaspoon paprika
        • 3 Tablespoons flour
        • 2 Cups milk
        • Salt and pepper to taste
        • Fresh parsley

        PREPARATION

        1. Add the chopped and peeled potatoes to a pot and cover with water. Bring to a boil and cook for 5 minutes. Drain.
        2. Grease a 9×13-inch or 3-4 quart baking dish. Add the drained potatoes, ham, and 1 cup of grated cheese, mix gently and set aside.
        3. Preheat the oven to 375°F (191°C).
        4. Melt the butter in a large skillet over medium heat. Add the onion and garlic and cook, stirring occasionally, until the onion softens, about 3 minutes.
        5. Stir in the flour until blended and the flour has absorbed the liquid. Lower the heat and slowly stir in the milk, simmer for 3-5 minutes or until thickened to the consistency of a sauce.
        6. Remove from heat. Add salt and pepper to taste, the paprika, and mix well.
        7. Pour the hot sauce over the ham and potatoes. Stir gently to coat.
        8. Bake, covered with foil, for 30 minutes. Remove foil, sprinkle 1 cup cheese on top and return to oven for 5-10 minutes more or until cheese is melted and casserole is bubbling around the edges.
        9. Remove from oven and garnish with fresh parsley. Serve and enjoy!

          OPTIONS AND TIPS

          • You can substitute the chopped ham for chopped or shredded chicken breast and it is very delicious.
          • Try adding a little grated Parmesan cheese just after uncovering the casserole and it will give it a special gratin.
          • You can use the cheese you like the most, even a combination of several.

          This is one of my favorite recipes for those days when I want to enjoy a delicious dinner that is easy and doesn't require a lot of prep time. You can prepare this pasta in advance and heat it at the time of serving.

          This dish is not only delicious, but it is also very nutritious.           TOTAL PREPARATION TIME: 40 minutes
          SERVINGS: 4-5

          INGREDIENTS
          • 1 lb. uncooked penne or rigatoni (You can use the paste of your choice)
          • 1 Medium onion, chopped
          • 1 Pound extra lean ground beef
          • Tablespoons olive oil
          • Cloves garlic, crushed
          • 1 1/2 Teaspoons dried oregano
          • 1 1/2 Cups tomato sauce
          • Salt and pepper to taste
          • 2 Cups shredded cheddar cheese

          PREPARATION

          1. Preheat your oven to 400°F.
          2. In a hot skillet over medium-high heat add the oil, beef, onion, and garlic, mix breaking up the meat with a meat chopper as you go, for 10 minutes.
          3. Stir in tomato sauce, oregano, salt, and pepper to taste. Cook covered for 10 more minutes.
          4. Cook the pasta for 10 minutes (it should be a little raw so it doesn't get mushy in the oven cooking). Drain the pasta and pour it into the baking dish.
          5. Pour the meat mixture on top and then toss until combined with the pasta. Top with an even layer of cheese.
          6. Bake for 10 minutes, uncovered until the cheese is well melted.
          7. Serve immediately and enjoy!

            2. In another pot, boil the chicken breast in water with salt. Cook for 15 minutes or until done. Let cool and cut into strips or cubes.
            3. Once the vegetables and chicken are cool, mix them in a bowl with the rest of the ingredients, and season with salt and pepper to taste. Chill in the refrigerator for at least 15 minutes before serving. Enjoy!

              • You can add 1/2 cup of chopped ham.

                Seasonings:

                  PREPARATION

                  1. Preheat oven to 430°F | 220°C.
                  2. Mix the melted butter with the seasonings including the white wine. Place chicken breast side up in a shallow baking dish; tie thighs with kitchen twine.
                  3. Place the potatoes, onions, and halved head of garlic next to the chicken and sprinkle with the butter mixture; season to taste with salt and pepper.
                  4. Bake for 1 hour and a half. Baste with cooking juices every 20 minutes. Continue baking for 30-60 minutes more, until a thermometer inserted into the thickest part of the thigh reads 170°-175° (cover loosely with foil if the chicken browns too quickly).
                  5. Let stand 10-15 minutes, add the chopped parsley and serve with vegetables. Enjoy!

                  • You can add to your chicken the vegetables of your choice such as carrots, leeks, zucchini, etc.

                  1. Preheat the oven to medium-high temperature (about 200°C | 400°F).
                  2. Put the potatoes in a large pot of salted water. Bring them to a boil and cook covered for 30-35 minutes or until fork tender. Drain well.
                  3. Lightly grease a baking sheet with oil. Place the potatoes in the pan and gently mash them with a potato masher (not too hard so they don't get mashed).
                  4. Mix together the butter, garlic, oregano and parsley. Pour the mixture over each potato. Sprinkle with salt and pepper.
                  5. Roast (or grill) until golden brown and crisp (about 10-15 minutes). Remove from oven and serve. Enjoy!

                  OPTIONS AND TIPS

                  • You can add parmesan cheese or the one of your choice and bake again for about 5 minutes or until it melts and your potatoes will have an additional delicious touch.

                        INGREDIENTS
                        • 1 Kilo boneless, skinless chicken thighs cut into small pieces
                        • 1/2 Cup plain yogurt
                        • 1 Tablespoon crushed garlic
                        • 1 tablespoon chopped ginger
                        • 1 Teaspoons garam masala
                        • 1 Teaspoon salt
                        • 3 Tablespoons vegetable oil
                        For the sauce:
                        • 3 Tablespoons butter
                        • 1 Large onion, finely chopped
                        • 1 1/2 Tablespoons crushed garlic
                        • 1 Tablespoon finely grated ginger
                        • 1 1/2 Teaspoons garam masala
                        • 1 Teaspoons ground cumin
                        • 1 Teaspoon turmeric powder
                        • 1 Teaspoon ground coriander
                        • 14 oz (400 g) Tomato puree (tomato sauce/Passata)
                        • 1 Teaspoon ground red chili powder
                        • 1 Teaspoon salt
                        • 1 1/2 Cups heavy cream
                        • 1 Teaspoon brown sugar
                        • 1/4 Cup water if needed
                        • 4 Tablespoons fresh cilantro for garnish

                        PREPARATION

                        1. In a bowl, combine the chicken with the yogurt, garlic, ginger, garam masala and salt; let stand for 30 minutes.
                        2. Heat the oil in a large skillet over medium-high heat. Add the chicken pieces in batches and fry until golden brown, about 3 minutes per side.
                        3. Melt the butter in the same skillet. Fry the onions until soft (about 3 minutes) while scraping up any browned bits stuck to the bottom of the pan.
                        4. Add the garlic, ginger and sauté for 1 minute until fragrant; then add the garam masala, cumin, turmeric and coriander. Fry for about 20 seconds until fragrant, stirring occasionally.
                        5. Pour in the tomato puree, chili powder, sugar and salt. Simmer for about 10-15 minutes, stirring occasionally until the sauce thickens and turns a deep reddish-brown color.
                        6. Add cream and chicken to skillet; cook for 8-10 minutes more until chicken is cooked through and sauce has thickened. Pour in water to thin the sauce, if necessary.
                        7. Garnish with cilantro, serve with hot rice and enjoy!
