INGREDIENTS
 
For the cake:
  • 1 Cup softened unsalted butter
  • 2 1/4 Cups granulated sugar
  • 3 Eggs
  • 3 Cups all-purpose flour
  • 1/2 Teaspoon baking soda
  • 1/2 Teaspoon salt
  • 1 Cup buttermilk
  • 2 Tablespoons lemon zest
  • 3 Tablespoons fresh lemon juice
For the glaze:
  • 1 Cup powdered sugar
  • 2 Tablespoons fresh lemon juice
  • Lemon zest for garnish

PREPARATION

  1. Preheat oven to 350°F, grease and lightly flour the pan of your choice.
  2. Sift together flour, baking soda and salt. Set aside.
  3. In another bowl, mix buttermilk, lemon zest and lemon juice. Set aside.
  4. In large bowl beat butter and sugar until light and fluffy, 3 to 4 minutes. Add eggs one at a time, beating well after each addition.
  5. Add one part of the flour mixture and mix, then add part of the buttermilk mixture and whisk. Repeat until all the flour and liquids are incorporated.
  6. Add to the prepared pan and bake for 55 to 65 minutes, or until the top is golden brown and a tester comes out clean. Let cool.
  7. To make the glaze: in a medium bowl, mix together the powdered sugar and lemon juice. Add more powdered sugar or lemon juice as needed to make a thick but pourable glaze.
  8. Pour the glaze over the top of the cake, letting it drip down the sides. Garnish with lemon zest to taste.
  9. Serve and enjoy.

    • 3/4 Cup granulated sugar

      PREPARATION

      1. Preheat oven to 350°F.
      2. Add butter, brown sugar and granulated sugar in a large bowl, beat for 5 minutes with a mixer until pale and creamy.
      3. Add eggs and vanilla extract. Beat until well combined.
      4. Mix flour, cinnamon, nutmeg, baking soda and salt in a medium bowl.
      5. Gradually add flour mixture to butter mixture with mixer on low speed. Beat until well combined, about 1 minute. Stir in the carrots, walnuts, raisins and mix.
      6. Drop by spoonfuls of batter onto prepared baking sheets with a silicone baking mat, at least 2 inches apart.
      7. Bake your cookies rotating halfway through baking, until lightly browned on the edges, 12 to 14 minutes.
      8. Cool the cookies on the pans for 3 minutes. Transfer to a wire rack to cool completely, about 30 minutes.
      9. For the frosting: in a large bowl, beat the cream cheese until creamy. Gradually add the powdered sugar and mix. Pour in the cream, vanilla and beat for 1 minute more until creamy. Chill covered until ready to decorate the cookies.
      10. Place a spoonful of frosting on the top of each cookie and spread. You can add chopped nuts or make a sandwich by joining two cookies together. Enjoy!

      • 250 g Cream cheese at room temperature

      • 300 ml Whipping cream

      • 4 Tablespoons water
      • 2 Mangos, peeled and diced
      For The Base:
      • 150 g Cookies
      • 80 g Melted butter
      For The Topping:
      • 3/4 Cup mango curd
      • Whipped cream

      PREPARATION

      1. Crush the cookies and add the melted butter, combine well. Press into the base of a 9-inch springform pan. Chill for 15 minutes or until firm.
      2. In a large bowl beat cream cheese, vanilla and sugar until smooth and creamy. Fold in the cream.
      3. Whisk the gelatin and water in a bowl, let stand 3 minutes to hydrate. Dissolve the hydrated gelatin in a bain-marie.
      4. Add 1/4 cup of the cream cheese mixture to the gelatin mixture, then add to the remaining mixture and mix well.
      5. Pour half of the cream cheese mixture over the cookie base. Top with diced mango, then top with remaining cream cheese mixture. Refrigerate overnight or until firm (about 4 hours).
      6. Pour Mango Curd over cooled cheesecake and smooth. Garnish with whipped cream to taste. Enjoy!

      4. Place the molds in a shallow baking dish and place them on the middle rack of the oven. Pour in enough hot water to come halfway up the sides of the molds; cover with foil. 
      5. Bake for 50 minutes or until a table knife inserted in the center comes out clean.
      6. Using tongs, carefully remove the molds from the water, transfer to the refrigerator to cool completely.

                1. In a large bowl with a hand mixer or stand mixer fitted with the whisk attachment, beat the heavy cream, powdered sugar, and vanilla on medium-low speed until the mixture becomes frothy. Increase speed to medium-high and continue beating until medium peaks form, about 3 minutes.
                2. Add the mascarpone cheese and continue mixing until stiff peaks form. Set aside.
                3. Combine the hot water, matcha powder and froth until smooth. Transfer to a flat-bottomed bowl that fits the biscuits.
                4. One at a time, quickly dip both sides of the cookies into the matcha mixture until soaked. Place them in the bottom of a 20 x 20 cm baking dish (You can use individual molds or the one of your preference), forming 2 rows of 6 cookies each.
                5. Spread half of the mascarpone cream over the cookies. Smooth the surface.
                6. Dip the remaining biscuits into the matcha mixture and place on top of the custard.
                7. Cover with the rest of the cream, smooth the top and cover with plastic wrap. Refrigerate for at least 4 hours, preferably overnight.

                    You will love this Fruit Tart Recipe! You will enjoy a crunchy tart, filled with a creamy combination of mascarpone cheese, cream cheese and the delicious flavor of vanilla, and on top of that you will find the main protagonists, fruits!
                    This tart recipe is very special, you can add the fruits of your preference; the raspberries, strawberries, apples, etc. are the most used for their delicious flavor and provide many colors. Prepare this tart for tea or coffee time, it is a dessert that is worth it!

                    INGREDIENTS
                    FOR THE CRUST:
                    • 2 Egg yolks
                    • 1 1/3 Cups all-purpose flour
                    • 1/4 Cup granulated sugar
                    • 1/2 Teaspoon salt
                    • 8 Tablespoons butter
                    • 1/2 Teaspoon vanilla
                      FOR THE FILLING:
                      • 1/2 Cup heavy cream
                      • 1 Cup mascarpone cheese
                      • 1/2 Cup cream cheese
                      • 1/2 Cup powdered sugar
                      • 2 Tablespoons lemon juice 
                      • 1 Teaspoon vanilla extract

                      FOR THE ASSEMBLY:

                      • Fruits of your choice: strawberries, blackberries, raspberries, blueberries, apricots, etc.

                       PREPARATION 
                      1. Preheat the oven to 350°F.
                      2. In a bowl add the flour, sugar, salt and stir. Add the butter, vanilla, egg yolks and stir until the dough forms.
                      3. Press the dough into a 9" tart pan with a removable bottom, pressing the dough all the way up the sides.
                      4. Prick all over with a fork, cover crust with foil or parchment paper and fill with dried beans. Bake until golden brown, 25 to 30 minutes. Let cool completely. 
                      5. In a medium bowl, beat the heavy cream with a hand mixer until stiff peaks form.
                      6. In another bowl add the mascarpone, cream cheese, powdered sugar, lemon juice, vanilla extract and beat very well until smooth. Incorporate the whipped cream with gentle movements.
                      7. Fill the base with the cream and place the fruits of your choice on top.
                      8. Serve and enjoy!
