Today we bring you this delicious Lemon-Blueberry Bundt Cake recipe to celebrate International Women's Day!

What better way to spoil them on this day than preparing this delicious cake, it has an incredible lemon scent and inside are the delicious blueberries that give it color and a special texture.

International Women's Day is a global holiday celebrated annually on March 8 to commemorate the cultural, political, and socioeconomic achievements of women.

 

TOTAL PREPARATION TIME: 1 Hour 30 minutes
SERVINGS: 12
COURSE: Dessert

INGREDIENTS

Cake:
  • 1 Cup butter
  • 2 Cups sugar
  • 4 Eggs
  • 2 ½ Cups flour
  • 1 ½ Teaspoon baking powder
  • ¼ Teaspoon baking soda
  • ¼ Teaspoon salt
  • Freshly squeezed juice of 2 lemons
  • 2 Tablespoons lemon zest
  • 1 Teaspoon vanilla
  • 1 Cup sour cream
  • 3 Cups blueberries
Glaze:
  • 1 Cup powdered sugar
  • 2 Tablespoons lemon juice

 PREPARATION 

  1. Heat oven to 350°F. Grease and flour a bundt pan.
  2. In a large bowl, sift together the flour, baking powder, baking soda and salt. Set aside.
  3. In another large bowl, beat the butter until smooth, add the sugar and beat for 2 to 3 minutes until fluffy. Add the eggs, one at a time, beating well after each addition. Add the lemon juice, lemon zest, vanilla and beat until combined.
  4. Add the flour in three parts, alternating with the sour cream; beat for 2 minutes. Stir in the blueberries and pour the mixture into the prepared pan.
  5. Bake at 350°F for 50 minutes or until a toothpick inserted in the center of the cake comes out clean. Cool on a wire rack for 20 minutes. Unmold and cool completely.
  6. Glaze: In a bowl, mix the sugar and lemon juice until the sugar is completely dissolved. Drizzle over top of cake and let it roll down the sides. 
  7. You can also garnish with blueberry, mint leaves and lemon zest; it looks great. Enjoy!

    TOTAL PREPARATION TIME: 45 minutes

    INGREDIENTS

    • 4 Ounces unsalted butter
    • 6 Ounces bittersweet chocolate
    • 2 Eggs
    • 2 Egg yolks
    • 1/4 Cup sugar
    • Pinch of salt
    • 2 Tablespoons all-purpose flour

    PREPARATION

    1. Preheat oven to 450°F. Butter and lightly flour four 6-ounce ramekins. Place the ramekins on a baking sheet.
    2. In a saucepan over a double boiler, melt the butter with the chocolate. In another medium bowl, beat the eggs with the egg yolks, sugar and salt on high speed until thick and pale.
    3. Whisk in the melted chocolate until smooth. Quickly fold it into the egg mixture, along with the flour.
    4. Pour the batter into the prepared pans and bake for 12 minutes, or until the sides of the cakes are firm but the center is soft.
    5. Let the cakes cool in the pans for 1 minute, then cover them with an inverted dessert plate. Carefully turn them over, let them stand for 10 seconds, and unmold. Serve immediately and enjoy.

    OPTIONS AND TIPS

    • You can accompany your cake with vanilla ice cream and more melted chocolate.
    • You can also serve it with red fruits and roses to add a more romantic touch.

    Matcha Mung Bean Mochi Balls

    Matcha Mung Bean Mochi Balls

    I bet you have heard about Mung Bean Mochi Balls, but what if I told you that one of our partner influencers made her own version and added a Matcha twist to it! All she added was the Matcha Powder and she now has a wonderful dessert. Enjoy this recipe!

    INGREDIENTS

    Paste
    • 1 cup steamed & cooked split mung bean
    • 1 cup milk
    • ½ cup granulated sugar
    • 1/8 cup oil
    • 2 tbsp sweet rice flour
    • 1 tbsp Matcha Powder
    Mochi
    • ½ cup sweet rice flour
    • ½ cup granulated sugar
    • ¼ cup water (room temperature)

            KITCHEN PRODUCT USED

                           

            INSTRUCTIONS

            Paste
            1. Start by soaking the mung beans for at least 3 hours or overnight. Steam them for 25-30 mins until they are soft.
            2. In a bowl, mix together milk and sugar. Pour the steamed mung bean into a sifter and mash into the milk and sugar mixture.
            3. Add in the sweet rice flour and oil. Mix thoroughly.
            4. On a high heated pan, pour in the filling mixture. Cook for 1-2 minutes on high heat until the mixture bubbles. Reduce the heat to medium-low and continue to cook the paste.
            5. Continuously stir the mixture. Once a dough begins to form (10 mins) fold in the dough to prevent from burning. Took for a total of 25 mins.
            6. Set aside and allow to cool completely. Once cooled, roll into 1 inch balls onto a plate and place in the refrigerator (wet your hands to roll the dough easily).
            Mochi
            1. Start by pouring a layer of corn starch onto a baking pan or clean counter top. Set aside
            2. In a bowl, sift in the rice flour. Mix in the sugar thoroughly.
            3. Pour in the water and mix.
            4. Place a paper towel over the bowl and wave in the microwave for 1 minute.
            5. Take out and immediately stir the mixture.
            6. Microwave for an additional 30 seconds.
            7. Take out and stir. While hot, use a spoon to place the dough onto the corn starch bed.
            8. Cover your hands in corn starch to prevent from sticking. Begin to knead the mochi ball. It will be hot so be careful!
            9. Knead and fold the mochi until a mochi dough forms. Cover the mochi dough with a bowl and allow to rest for 2-3 minutes (do not place in the refrigerator)
            10. Once the dough has cooled slightly (a little warm is fine) separate out the dough into individual balls. Flatten each ball and place the cooled mung bean filling inside.

These flavors are great together and definitely make for a more unique cupcake. Be careful not to let the matcha overpower the coconut though!

                                  • Organic Matcha Powder
                                    Matcha Coconut Cupcakes Recipe
                                  • INGREDIENTS

                                    • 2 teaspoons Zulay Kitchen matcha powder
                                    • 1 ¼ cups all-purpose flour
                                    • 1 teaspoon baking soda
                                    • 2/3 cup sugar
                                    • 2 eggs
                                    • 1/3 cup vegetable oil
                                    • 2/3 cup coconut milk
                                    • Cream Cheese Frosting (Take help from the store! I used store bought cream cheese frosting and it was delicious! Add sweetened shredded coconut to garnish.)

                                        INSTRUCTIONS

                                        1. Preheat the oven to 350 degrees. This is a one bowl mix!
                                        2. First, you’ll be working with the wet ingredients, adding each ingredient in stages. Mix sugar and eggs to combine. Then add oil. Then add the coconut milk.
                                        3. Finally, add the dry ingredients. Stir until well combined.
                                        4. To make cupcakes, bake at 350 degrees for 20 minutes. I used a steel muffin tin and the cook time went very quick!
                                        5. After taking the cupcakes out of the oven, let them cool for 30 minutes before frosting.

                                                                      INSTRUCTIONS

                                                                      1. Preheat oven to 375 degrees Fahrenheit.
                                                                      2. Separate the egg whites and the egg yolks into two different bowls.
                                                                      3. In the bowl with the egg yolks, add in the condensed milk and mix together.
                                                                      4. In the bowl with the egg whites, use a hand mixer to whip up the egg whites until stiff peaks form.
                                                                      5. Add the matcha powder in the egg whites bowl and mix until the matcha is fully incorporated.
                                                                      6. Lightly fold in half of the matcha egg white mixture into the condensed milk egg yolk bowl.
                                                                      7. Add in the remaining batch of egg whites and lightly fold the two mixtures together. Be sure not to over mix as you want to maintain some fluffiness.
                                                                      8. In a lightly greased ramekins, pour the mixture in to the top.
                                                                      9. Place the ramekins on a baking sheet and put the baking sheet into the oven for 17-20 minutes.
                                                                      10. Serve and enjoy!

                                                                                INSTRUCTIONS

                                                                                1. In a large bowl, separate the egg whites.
                                                                                2. Beat the egg whites with an electric mixer on medium speed until soft peaks are formed.
                                                                                3. Put the mixer on high and add the half of the granulated sugar continuing to mix until stiff peaks are formed then add the rest of the sugar mixture until the peaks are shiny
                                                                                4. Using a strainer, sift the flour, powdered sugar and matcha powder in the egg whites mixture. Please note to remove all the large pieces from the strainer.
                                                                                5. Fold dry ingredients in one motion in the egg white mixture until completely combined.
                                                                                6. Preheat oven to 300˚F.
                                                                                7. Add the mixture in a Piping Bag
                                                                                8. Add about 1 and 1/2 dollops onto a baking sheet lined with parchment paper.
                                                                                9. Let me mixture rest until it's not soft to touch.
                                                                                10. When the mixture is dry to touch, bake it for about 15 minutes.
                                                                                11. Make a filling of your choice.
                                                                                12. Let the baked macaroons cool before adding the filling.

                                                                                SERVINGS: 8-10
                                                                                COURSE: Dessert

                                                                                INGREDIENTS
                                                                                • 6 Eggs
                                                                                • 3/4 Cup sugar
                                                                                • 1 (8 ounce) package cream cheese, softened
                                                                                • 1 (14 ounce) can sweetened condensed milk
                                                                                • 1 (12 ounce) can evaporated milk
                                                                                • 1 Teaspoon vanilla extract
                                                                                • Pinch of salt

                                                                                PREPARATION

                                                                                1. Preheat oven to 175ºC (350ºF).
                                                                                2. In a small saucepan over medium-low heat, cook sugar, stirring, until golden brown. Pour into a 10-inch round cake pan, tilting to coat the bottom and sides. Set aside.
                                                                                3. In a large bowl or blender, beat cream cheese, eggs, condensed milk, evaporated milk, a pinch of salt, and vanilla until smooth. Pour into the caramel-coated pan.
                                                                                4. Place the mold in a large pan with high walls. Carefully pour hot water from the kettle into the mold around the flan pan to a depth of about 5 cm.
                                                                                5. Bake for 50 to 60 minutes, until the center, is set. Cool for one hour on a rack, then chill in the refrigerator for 6 hours or overnight.
                                                                                6. To unmold, run a knife around the edges of the pan and invert it onto a rimmed serving platter. Serve and enjoy!

                                                                                OPTIONS AND TIPS

                                                                                • You can give it a more intense vanilla aroma by using more to taste.
                                                                                • Try adding a few spoonfuls of a liqueur of your choice to the mixture and add a special aroma.
                                                                                • Run a knife through before inverting the flans to help them come out more easily.
                                                                                • Prepare your flan the day before so you don't have to worry about the preparation of the dessert, it is very versatile and you can make it with time.
                                                                                • Mix all of the ingredients well. If you want to be sure your custard is very silky, you can always pass it through a sieve to ensure no small particles get into your flan.

                                                                                  TOTAL PREPARATION TIME: 3 Hours

                                                                                  INGREDIENTS
                                                                                  • 100 ml of double cream
                                                                                  • 200 g milk chocolate
                                                                                  • Zest of a large orange
                                                                                  • Cocoa, powdered sugar, and grated coconut for coating

                                                                                  PREPARATION

                                                                                  1. Put the chocolate and cream in a bowl and melt in 20-second bursts in the microwave.
                                                                                  2. Stir in the orange zest, mix and pour into a bowl that allows the mixture to be at least 2 cm deep.
                                                                                  3. Cool the mixture to room temperature, then refrigerate until firm. Shape into balls. Roll the truffles in sugar, shredded coconut, or cocoa. Store in an airtight container at room temperature, serve, and enjoy!

                                                                                    OPTIONS AND TIPS
                                                                                    • You can use anything to coat the truffles, such as cocoa, chocolate chips, crushed cookies, among others.
                                                                                    • You can prepare the truffle mixture overnight and in the morning you will have them ready to shape.
                                                                                    • If you like a stronger chocolate flavor, use dark chocolate, it will give it more intensity.
                                                                                    • You can put chocolate chips in the mixture at the time of shaping and it will have an additional texture and flavor.

                                                                                    INGREDIENTS
                                                                                    • 1 Pie crust (see recipe here)
                                                                                    • 3 Eggs
                                                                                    • 1 Cup brown sugar
                                                                                    • ½ Teaspoon salt
                                                                                    • 1 Teaspoon vanilla
                                                                                    • 1 Cup light corn syrup
                                                                                    • ¼ Cup unsalted butter, melted
                                                                                    • 1-½ Cup chopped walnuts
                                                                                    • ½ Cup whole walnuts

                                                                                    PREPARATION

                                                                                    1. Preheat the oven to 356° F (180°C).
                                                                                    2. In a bowl, whisk the eggs with the brown sugar, salt, vanilla extract, corn syrup, and melted butter. Whisk until well combined.
                                                                                    3. Lightly flour a 9-inch tart pan and place the batter in the pan pressing to secure. Use a fork to poke holes in the bottom of the pie crust.
                                                                                    4. Sprinkle the chopped pecans evenly across the bottom of the pie crust.
                                                                                    5. Pour the filling over the pecans. Gradually the pecans will rise to the surface.
                                                                                    6. Arrange the whole pecans in concentric circles on top of the wet mixture in a decorative manner.
                                                                                    7. Cover the cake with foil and bake for 30 minutes. After 30 minutes, uncover and continue baking until the filling is completely set in the center, about 25-30 minutes.
                                                                                    8. Once done, place the pie on a wire rack and let the pie rest for at least two hours before slicing. Enjoy!

                                                                                    • 1 Teaspoon pumpkin pie spice
                                                                                    • 1 Teaspoon vanilla
                                                                                    • Pinch of salt

                                                                                    For the meringue:

                                                                                    • 4 Large egg whites
                                                                                    • 1/2 Cup granulated sugar
                                                                                    • 2 Teaspoon cornflour
                                                                                    • 1 Teaspoon vanilla extract

                                                                                    PREPARATION

                                                                                    1. In a bowl, put the flour, salt, sugar, and cold butter in small cubes, and rub with your fingers until it looks like breadcrumbs. Pour cold water and egg yolk, mix and join with your hands to form a dough.
                                                                                    2. Then we shape it into a disk, wrap and refrigerate it for at least 2 hours before stretching and kneading.
                                                                                    3. Next, flour the work surface, and roll out the dough to a thickness of 6 mm.
                                                                                    4. Lightly flour a 7-inch tart pan and place the dough in the pan pressing to secure it. Store the mold with the dough in the refrigerator while preparing the filling.
                                                                                    5. Preheat the oven to 392 °F.
                                                                                    6. In a bowl, add the pumpkin puree, condensed milk, eggs, spices, vanilla, and salt and mix very well. Pour the filling into the crust.
                                                                                    7. Bake the tart for 10 minutes at 392 °F, then reduce the oven temperature to 374 °F and bake for 35 to 40 minutes more until the pumpkin filling is firm but looser in the center.
                                                                                    8. For the meringue: beat the egg whites until stiff, then gradually fold in the sugar, vanilla and cornmeal until thick and glossy. Top the warm pumpkin pie with the meringue mixture, swirling with the end of a teaspoon. Bake for 15-20 minutes until crisp. Let cool completely before removing the pie from the pan to slice. Serve and enjoy!

                                                                                    Homemade Pumpkin Spice Donuts

                                                                                    Pumpkin Spice Donuts! With fall and all things pumpkin spice already dominating every store and coffee shop, it seemed like the right time to add a recipe about, well, pumpkin spice, of course!

                                                                                    These amazing donuts are a great dessert idea to include for Thanksgiving dinner. We got this delicious recipe courtesy of our friends at Mommieswithcents.com.

                                                                                     

                                                                                    TOTAL PREPARATION TIME: 35 minutes
                                                                                    SERVINGS: 18 donuts
                                                                                    COURSE: Dessert


                                                                                    INGREDIENTS
                                                                                    • 1/2 Cup vegetable oil
                                                                                    • 3 Large eggs
                                                                                    • 1 1/2 Cups granulated sugar
                                                                                    • 1 15 Oz. can of pumpkin puree
                                                                                    • 1 1/2 Tsp. pumpkin pie spice
                                                                                    • 1 1/2 Tsp. salt
                                                                                    • 1 1/2 Tsp. baking powder
                                                                                    • 1 3/4 Cups flour
                                                                                    Coating:
                                                                                    • 1 Stick of butter, melted
                                                                                    • 1 Cup granulated sugar
                                                                                    • 2 Tbsp. cinnamon

                                                                                    PREPARATION 

                                                                                    1. Preheat oven to 350° F.
                                                                                    2. In a large bowl, add all ingredients except the flour. Mix on medium speed until smooth. Add the flour, stirring until smooth.
                                                                                    3. Fill the wells of the donut pans evenly until about 3/4 full.
                                                                                    4. Bake the donuts 15-18 minutes, or until a toothpick inserted comes out clean.
                                                                                    5. Remove the donuts from the oven. After a few minutes, transfer them to a cooling rack.
                                                                                    6. After the donuts have cooled off a bit but are still warm, quickly dip them on each side in the melted butter, then gently shake them in a bag with the sugar and cinnamon mixture to coat.
                                                                                    7. Serve and enjoy!
