This recipe was passed down from
my grandmother. It was told to me so that I had to remember what she said, and put it together by how it tasted. I think this year is the best attempt ever. Here it is and Happy Holidays! - Marcia K.

Oyster Stuffing, A Holiday Family Recipe

Ingredients

  • 4 cans 8 oz. cans of oysters

  • 2 sleeves Saltine crackers

  • 1 cup melted butter (2 sticks)

  • 1 cup half n half

  • The liquor from the oysters cans

  • Pepper

  • Larger mixing bowl

  • Sauce pan

  • At least 1 cup of left over stuffing used to stuff the turkey

For this recipe, I used a San Francisco brand Sourdough stuffing mix (About 2 cups)

Preparation

  1. Make the stuffing for the dinner, or prepare sourdough stuffing per the directions. I sauteed ½ diced onions, 1 cup thinly chopped celery, salt and pepper, in 3 tbsp. olive oil.

  2. After about 8 minutes, remove from heat and add 2 cubes sourdough stuffing cubes.

  3. Add chicken broth about ½ cup and stir until well moistened.

  4. Add a clove of minced garlic and stir again. Set aside.

  5. In the same saucepan melt the entire cup of butter until liquid. Set aside.

  6. Use a rolling pin or ladle spoon and crush the cracker in the sleeves until coarsely broken up.

  7. Split the packages and spill them into a large mixing bowl.

  8. Add the butter and 2 cloves minced garlic. Mix well until even consistency.

  9. Open the oysters and drain the liquor into a measuring cup. Put the whole oysters in another bowl.

  10. Squeeze the juice of one lemon in the bowl of whole oysters. Stir lightly to distribute.

  11. Take a 9 x 13 casserole dish and spread a layer of cracker crumbs, then a layer of oysters, then another layer of oysters then a final layer of the few cracker crumbs left.

  12. Take the 2 cups of dressing and make little wells in your casserole and distribute the stuffing mix over the casserole dish.

  13. Add to the liquor you have reserved, the 1 cup half n half and drizzle that over the whole dish evenly.

  14. Bake for about 35 - 40 min until the top is well brown.
