Kiwi Lime Marmalade
Kiwi and Lime combine in this refreshing recipe to make the most amazing marmalade (or jam or jelly depending on your preference) to spread on top of any type of bread or cake and turn it into a refreshing summer snack or a citrus pick-me-up for winter blues. You will want this all year round!
Quarter the kiwis lengthwise and then cut them crosswise into 1/2 inch cubes.
Combine the kiwi cubes with the other ingredients into a microwave-safe dish and stir will to combine.
Cook, uncovered, in the microwave for 5 minutes on high. Stir, and cook for another 5-6 minutes or until the marmalade thickens.
Allow to cool to room temperature, then transfer to a glass jar, cover and refrigerate. The Marmalade will keep for about a week in the refrigerator.
