Healthy Blueberry Pie

It’s the perfect healthy sweet treat with a hint of doughy-ness, & a crunch factor from the pecans says Ruth Martin!

Ingredients

The crust:⁣

  • 1.25 cups oat flour⁣
  • 1/3 cup tapioca flour ⁣
  • 2 “flax eggs” ⁣
  • MCT oil ⁣⁣

The filling:⁣

  • Frozen blueberries (2 cups)⁣
  • 1 cup oat milk ⁣
  • 1/2 cup date sugar ⁣
  • Cinnamon 

Kitchen Product Used:

                    

    Instructions

    1. Prepare the crust by mixing everything together

    2. Form a dough and press down and cool for 20 minutes

    3. For the filling, prepare in a skillet and mix on low heat for 5 minutes

    4. Pour over the dough and place in the freezer for 20 minutes
