Banana Bread

Do you end up having overripe bananas just sitting over your counter and don't know what to do with it? Here is a recipe that you'll want to keep on hand! Not only is this bread perfectly sweet, but it stays moist for days. No dry banana bread anywhere in sight. You can enjoy this bread plain or mix in some chopped walnuts or even chocolate chips.

  • 1 1/2 cups of all-purpose flour
  • 1 tsp baking soda
  • 1 pinch of salt
  • 1/3 cup melted butter
  • 3/4 cup brown sugar
  • 1 large egg (beaten)
  • 2 to 3 overripe bananas (about 1 1/2 cups when mashed)

  1. Preheat over to 350 F and lightly grease a 4x8 inch loaf pan
  2. Mash the overripe bananas in a mixing bowl. Add the melted butter, then the baking soda and salt and mix with the Zulay Dough Blender. Then mix in the sugar, beaten egg and vanilla extract and mix until well blended. Add flour and mix until well-blended
  3. Pour the batter into your prepared loaf pan and bake for 50-60 minutes or until a toothpick inserted into the center comes out clean
  4. Let cool in the pan for a few minutes, then remove and let cool completely before serving
