Avocado Egg Salad

You will be surprised by the delicious flavor and creaminess of the avocado egg salad. Is quickly prepared, you can use it for breakfast in a delicious sandwich, or for lunch/dinner with your favorite proteins. It is ideal for spring and summer, the best part is that it is very delicious and easy to prepare. Join us!

INGREDIENTS
  • 2 Tablespoons mayonnaise
  • 1 Tablespoon fresh lemon juice
  • 1 Teaspoon Dijon mustard
  • 2 Tablespoons chopped parsley
  • 1 Large avocado, pitted, peeled and cubed
  • 4 Hard boiled eggs, chopped
  • 2 Tablespoons chopped onion
  • 2 Tablespoons chopped celery
  • Salt and freshly ground black pepper, to taste

PREPARATION

  1. Combine mayonnaise, lemon juice, mustard, parsley, salt and pepper to taste; mix well.
  2. In a large bowl place the rest of the ingredients and add the prepared dressing. Mix well to integrate, you can mash the avocado a little to obtain more creaminess.
  3. Serve the salad with toasted bread or as a garnish on your favorite dishes. Enjoy!
