Avocado Egg Salad
You will be surprised by the delicious flavor and creaminess of the avocado egg salad. Is quickly prepared, you can use it for breakfast in a delicious sandwich, or for lunch/dinner with your favorite proteins. It is ideal for spring and summer, the best part is that it is very delicious and easy to prepare. Join us!
- 2 Tablespoons mayonnaise
- 1 Tablespoon fresh lemon juice
- 1 Teaspoon Dijon mustard
- 2 Tablespoons chopped parsley
- 1 Large avocado, pitted, peeled and cubed
- 4 Hard boiled eggs, chopped
- 2 Tablespoons chopped onion
- 2 Tablespoons chopped celery
- Salt and freshly ground black pepper, to taste
- Combine mayonnaise, lemon juice, mustard, parsley, salt and pepper to taste; mix well.
- In a large bowl place the rest of the ingredients and add the prepared dressing. Mix well to integrate, you can mash the avocado a little to obtain more creaminess.
- Serve the salad with toasted bread or as a garnish on your favorite dishes. Enjoy!
