OUR STORY

Zulay Kitchen is named after my extraordinary mother, Zulay. She was raised in poverty-stricken Venezuela and, against all odds, brought my brother and me to live in the US. As a single mother, she worked extra-long hours but still found time to cook healthy meals for us. At the time, I thought nothing of it. But now that I'm married with children of my own, I see how much of a super-hero mom she really was.

My wife and I created Zulay Kitchen to make shopping easier than ever in today's busy world. We believe that cooking should be fast and easy, so you have more time to enjoy with your loved ones.

Enjoy this tasty peach salad. Delicious, elegant and really refreshing!
With very few ingredients and steps you will have ready an incredible salad that goes perfectly with everything. The peach brings its flavor and texture, this salad will be part of your favorite summer recipes!

 

TOTAL PREPARATION TIME: 15 Minutes
SERVINGS: 7-8
COURSE: Lunch/Dinner

INGREDIENTS
  • 1/2 Red onion, finely chopped
  • 8 Ounces arugula
  • 2 Ripe peaches, pitted and thinly sliced, with or without skin
  • 1/2 Cup crumbled soft blue or feta cheese
  • 1/2 Cup roasted almonds or walnuts
Dressing:

PREPARATION

  1. In a bowl place all the salad ingredients, set aside.
  2. In another bowl add the oil, lemon, mustard, garlic, salt, pepper and mix well.
  3. Drizzle half the dressing over the vegetables, then toss to coat. Serve and drizzle a little more dressing. Enjoy!

    In just 15 minutes you will have ready a salad that is not only tasty but also very easy to prepare and with ingredients that we usually have at home. The corn adds a special flavor that combines perfectly with the feta cheese, tomato, basil and vinaigrette. Join us!

    SERVINGS: 6-7

    INGREDIENTS
    • 5 Ears of fresh corn, husks removed
    • 1/2 Cup chopped red onion
    • 1 Cup crumbled feta cheese
    • 3 Tablespoons finely chopped fresh parsley
    • 3 Tablespoons finely chopped fresh basil
    • 1 Cup quartered cherry tomatoes (optional)
    • 1 Cup diced cucumbers (optional)
    For the vinaigrette:
    • 4 Tablespoons olive oil

    PREPARATION

    3. In another bowl prepare the vinaigrette by mixing the oil, vinegar, garlic (optional), salt and pepper to taste. Add it to the salad and mix well.
