OUR STORY

Zulay Kitchen is named after my extraordinary mother, Zulay. She was raised in poverty-stricken Venezuela and, against all odds, brought my brother and me to live in the US. As a single mother, she worked extra-long hours but still found time to cook healthy meals for us. At the time, I thought nothing of it. But now that I'm married with children of my own, I see how much of a super-hero mom she really was.

My wife and I created Zulay Kitchen to make shopping easier than ever in today's busy world. We believe that cooking should be fast and easy, so you have more time to enjoy with your loved ones.

Lemon Cake Recipe! This incredible cake will make you repeat more than once, it is a very delicious dessert full of the citrus flavor and aroma of lemon.
This cake is very easy to prepare and has an incredible presentation that gives it the magic touch. I like to prepare this dessert for outdoor meals in the summer or spring, plus it is very fresh. Join us!

 

TOTAL PREPARATION TIME: 1 Hour 30 minutes
SERVINGS: 8-10
COURSE: Dessert

INGREDIENTS
 
For the cake:
  • 1 Cup softened unsalted butter
  • 2 1/4 Cups granulated sugar
  • 3 Eggs
  • 3 Cups all-purpose flour
  • 1/2 Teaspoon baking soda
  • 1/2 Teaspoon salt
  • 1 Cup buttermilk
  • 2 Tablespoons lemon zest
  • 3 Tablespoons fresh lemon juice
For the glaze:
  • 1 Cup powdered sugar
  • 2 Tablespoons fresh lemon juice
  • Lemon zest for garnish

PREPARATION

  1. Preheat oven to 350°F, grease and lightly flour the pan of your choice.
  2. Sift together flour, baking soda and salt. Set aside.
  3. In another bowl, mix buttermilk, lemon zest and lemon juice. Set aside.
  4. In large bowl beat butter and sugar until light and fluffy, 3 to 4 minutes. Add eggs one at a time, beating well after each addition.
  5. Add one part of the flour mixture and mix, then add part of the buttermilk mixture and whisk. Repeat until all the flour and liquids are incorporated.
  6. Add to the prepared pan and bake for 55 to 65 minutes, or until the top is golden brown and a tester comes out clean. Let cool.
  7. To make the glaze: in a medium bowl, mix together the powdered sugar and lemon juice. Add more powdered sugar or lemon juice as needed to make a thick but pourable glaze.
  8. Pour the glaze over the top of the cake, letting it drip down the sides. Garnish with lemon zest to taste.
  9. Serve and enjoy.

Honey Lime Chicken! For those times when you want to have a quick, easy and delicious dinner.
This amazing chicken recipe allows you to get a golden brown, tender chicken with a very special flavor. You can prepare this chicken in advance and take it to the oven for a few minutes and it will be as freshly prepared. It goes great with white rice or vegetables, try it and you will love this recipe!

 

TOTAL PREPARATION TIME: 55 minutes
SERVINGS: 4
COURSE: Lunch/Dinner

INGREDIENTS
  • 4 Chicken thighs with skin and bone
  • 3 Tablespoons olive oil
  • Juice of 1 lime
  • 1 Tablespoon honey
  • 3 Crushed garlic cloves
  • Salt and pepper to taste
  • 1 Tablespoon soy sauce
  • Cooked white rice to serve

PREPARATION

  1. Add the chicken to a bowl along with the lime juice, honey, garlic and stir to coat evenly with the marinade. Cover with plastic wrap and refrigerate for at least 30 minutes.
  2. In a large ovenproof skillet over medium-high heat, add the oil. Season both sides of the marinated chicken with salt and black pepper.
  3. Add chicken to skillet, skin side down. Cook until the skin is browned and crispy, about 7 minutes. Turn chicken thighs over and cook 4 minutes more. Turn off the heat, pour off the remaining marinade and transfer the skillet to the hot oven (400 °C).
  4. Bake until chicken is cooked through, about 10 to 12 minutes more.
  5. Serve with white rice or vegetables. Enjoy!

COURSE: Sauce/Snack

INGREDIENTS
  • 1/2 Large unpeeled cucumber
  • 1 1/4 Cups plain Greek yogurt
  • 2 Crushed garlic cloves
  • 3 Tablespoons olive oil
  • 1 Tablespoon white vinegar
  • 1 Tablespoon lemon juice
  • 1/2 Teaspoon salt
  • 1 Tablespoon chopped fresh dill

PREPARATION

  1. Using a fine strainer, extract as much liquid as possible from the grated cucumber and add it to a large bowl.
  2. Add the yogurt, garlic, oil, vinegar, lemon, dill and salt to the drained cucumber. Mix well.
  3. Serve chilled with pita bread for dipping. Enjoy!
